Preparation: Slit the baby eggplants into four quarters keeping the stem intact, and soak them in salted water to prevent browning.
Tempering: Heat sesame oil in a heavy cast iron kadai. Add mustard seeds, fenugreek seeds, curry leaves, and a pinch of hing. Allow them to crackle.
Garlic & Eggplant Roast: Add the whole garlic cloves and saut├й for 2 minutes until light golden. Add the drained eggplants and roast on medium flame until the skin blisters and softens.
Simmering: Pour in the thick tamarind extract, turmeric powder, vathakkal masala, and salt. Cover and simmer on low heat for 8–10 minutes until oil separates from the edges.
Final Touch: Uncover and roast on medium-high heat for another 2 minutes until the gravy coats the eggplants and garlic completely. Serve hot!
